A few particularly successful strains of the vinifera species have come to be known as the “noble” varieties, such as Cabernet Sauvignon, Pinot Noir, Chardonnay, and Riesling. 53 The most common, Vitis labrusca, can survive cold winters and yields the hearty Northern Fox grape, which has a thick skin and a distinctive, sour flavor.
