In another bowl, mash the bananas until smooth. Add the chia seeds and milk and stir well. Add the wet ingredients to the dry ingredients and whisk until no lumps remain. Preheat a skillet. Using 1⁄4 cup (60 ml) of batter for each pancake, cook for 4 to 5 minutes on each side, until lightly browned and no longer doughy. VARIATION: Take these pancakes to the next level by adding an extra flavor to the batter in step 3. Try one of the following options: 2 tablespoons cacao nibs or chocolate chips; 1⁄2 cup (80 g) pineapple chunks; 1 teaspoon cinnamon; 1⁄2 cup (30 g) shredded coconut; 1⁄2 cup (70 g) blueberries.

Remove from the heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork and transfer to a large bowl to cool for 10 minutes. 2 3 Fold in the carrot, celery, bell pepper, peas, goji berries, and parsley. In a small bowl, whisk together the lemon juice, olive oil, and salt. Pour over the quinoa and toss to combine. Store any leftovers in a covered container in the fridge for up to five days. SUPERFOOD TIP: Goji berries can be fairly dry, much more so than raisins. They will soften up in the salad over the course of a few hours, however they can be given a 10-minute soak in warm water before using, if preferred.

Season lightly with the lemon juice and a little salt. 2 For the superfood topper, heat a small saucepan with a tight-fitting lid over medium-high heat. To check that it’s hot enough, drop in a little water—it should sizzle and evaporate straight away. Add 1 tablespoon of the amaranth seeds to the saucepan, cover immediately and begin shaking the saucepan back and forth quickly to keep the amaranth moving for 15 seconds.
