In another bowl, mash the bananas until smooth. Add the chia seeds and milk and stir well. Add the wet ingredients to the dry ingredients and whisk until no lumps remain. Preheat a skillet. Using 1⁄4 cup (60 ml) of batter for each pancake, cook for 4 to 5 minutes on each side, until lightly browned and no longer doughy. VARIATION: Take these pancakes to the next level by adding an extra flavor to the batter in step 3. Try one of the following options: 2 tablespoons cacao nibs or chocolate chips; 1⁄2 cup (80 g) pineapple chunks; 1 teaspoon cinnamon; 1⁄2 cup (30 g) shredded coconut; 1⁄2 cup (70 g) blueberries.

Add 1 tablespoon of the amaranth seeds to the saucepan, cover immediately and begin shaking the saucepan back and forth quickly to keep the amaranth moving for 15 seconds.
