Stirring constantly, let the vegetables cook until the onions turn deep brown. Then return the beef to the pot along with the wine, tomatoes, stock, mushrooms, thyme, and bay leaves. Bring to a boil then lower the heat and cover. Let the stew cook until the meat is fork tender, about 2 hours. Once the beef is cooked, discard the bay leaves and season the braising liquid with salt and pepper.
Bring to a boil over high heat, then reduce to a gentle simmer and cook just until all the vegetables are tender. You still want to be able to identify each one.
